Grab a bowl of these Delicious Yakitori Chicken Noodles: A Japanese-inspired delight featuring tender chicken pieces in a savoury sweet sauce. Enhanced with vibrant vegetables, this dish offers a perfect balance of flavours and textures, all ready to enjoy in under 30 minutes.
Ingredients
- 2 teaspoons of vegetable oil
- 60g (2oz) of shredded cabbage
- 1 small carrot, julienned
- ½ red bell pepper, sliced into strips
- 3 spring onions, green part sliced into thin strips
- 250g (8.8oz) boneless skinless chicken thighs, sliced into thin small strips
- 100g (3.5oz) of dried medium egg noodles
For the sauce:
- 3 tablespoons of soy sauce (Kikkoman)
- 2 tablespoons of mirin
- 1 tablespoon of rice vinegar
- 1 tablespoon of brown sugar
- 1 teaspoon of minced garlic
- ½ teaspoon of grated ginger
- pinch of black pepper
Instructions
- Combine the ingredients for the sauce in a small bowl. Set aside
- Add the vegetable oil to a large frying pan or wok over a medium high heat
- Add the cabbage, carrots, red pepper and green onion and fry for a couple of mins to soften, remove and set aside.
- In the meantime, soak your noodles in some boiling hot water until softened.
- Add the chicken to the pan and season with salt and black pepper and fry until lightly golden. Add in the sauce and bubble on high until it reduces and starts to caramelize fhe chicken and loosely cover it in the sauce
- Add back in the veg and noodles, toss until all combined and heated through
- Divide among two bowls
- Enjoy!!
