Sweet Chilli Chicken Meatballs - easy, delicious, sticky glazed chicken meatballs in a simple sweet chilli sauce. Perfectly cooked in the oven or Actifry!!
Gotta love a simple quick meal at dinner time, and this one is pretty effortless. All cooked in the time it takes to get your sides ready and the kids will love it too.
I love chicken mince (or ground chicken), it's a great alternative to regular beef mince and can be combined with all kinds of different seasonings sauces for variation.
So when I added some to my shopping cart this week, I knew meatballs were on the cards and I wanted something really easy but flavoursome to go with some plain rice and stir-fried veggies.
Recently I have started added breadcrumbs to my meatballs, but when divided up into portions it's really great and helps to keep the meatballs lovely and tender.
I've used regular fine breadcrumbs before, but for these, I opted for some panko and omg the result was amazing.
These meatballs were super addictive and really tasty.
Food and meals need to be enjoyable and as this is a long life journey, not an overnight trip where you can revert back to old eating habits. You can ensure you can eat absolutely anything within moderation.
So if you fancy that little bit of fat on your bacon or real butter on your toast, olive oil on your roasted vegetables, breadcrumbs in your meatballs/meatloaf, or some avocado at breakfast. Use your points for exactly that!!
I've seen so many comments out there on social media, lately where others are shocked that someone might use their points on this kind of stuff or a certain ingredient in their meal instead of a chocolate bar, or a bag of crisps etc.
Points are not just for junk/processed snack foods. So use them on whatever you want to.

Serve with any stir-fried veggies of your choice from the speed foods list.
I went for a yummy kale mix, which contains chopped kale, shredded Brussels and julienned broccoli stalks.
It's such a handy mix and takes a few minutes in a pan. I just saute in cooking oil spray with simple salt and black pepper.

Sweet Chilli Chicken Meatballs (Oven or Actifry)
Sweet Chilli Chicken Meatballs - easy, delicious stick glazed meatballs in a simple sweet chilli sauce. Perfectly cooked in the oven or Actifry!!
Ingredients
for the meatballs
- 455g (1lb) of extra lean chicken mince (ground chicken) or can use turkey
- 30g (½ cup) of panko bread crumbs
- 1 egg
- 2 spring onions, sliced
- 1 tbs of chopped fresh cilantro
- 1 teaspoon of freshly grated ginger
- pinch of salt and black pepper
for the sauce
- 3 tbs of sweet chilli sauce
- 1 tbs of light soy sauce
- 3 tbs of water
to garnish
- chopped spring onions
Instructions
Actifry:
- Add the ingredients for the meatballs to a bowl, and mix until ingredients are just combined.
- Form into 12 equal size meatballs (or you can make smaller ones if you prefer).
- Remove the pan from the Actifry, spray the pan with cooking oil spray.
- Carefully place meatballs into the Actifry pan, spaced out (with paddle removed)
- Spray over top with cooking oil spray
- Cook for 8 minutes with paddle removed, you will need to carefully rotate half way through.
- After 8 minutes, place back in paddle and cook for a further 5 minutes.
- Whisk together sauce ingredients, pour this over the meatballs and cook for another 3-5 minutes, just until meatballs are coated and sticky in appearance.
- Serve sprinkled with chopped spring onions.
Oven Method:
- Preheat oven to 200c/400f
- Add the ingredients for the meatballs to a bowl, and mix until ingredients are just combined.
- Form into 12 equal size meatballs (or you can make smaller ones if you prefer).
- Place on a baking tray lined with parchment paper
- Spray over the top with cooking oil spray.
- Bake for 15 minutes, until they look lightly browned and firm.
- Whisk together sauce ingredients, add this to a frying pan with the meatballs and heat over medium heat until coated and sticky and meatballs are cooked through.
- Sprinkle with chopped spring onions.
- Serve and enjoy

they freeze fine after cooking, I portion up in meal prep containers with sides, so it's just a case of heating when wanted.

Easy, quick and tasty. only ever made chips in my actifry so this was a real plus. Maybe you have more actifry recipes? I used turkey thigh mince and added some garlic, onion & red robin seasoning to the meatballs.
Will definitely be making again and possibly with a sweet and sour sauce and a barbecue sauce too.
