- Season Well: Don't be shy with your seasonings. Beyond salt and pepper, consider adding a variety of spices to your preferred taste. There really is not right or wrong to choices of seasonings. Basic salt and pepper is totally fine though too of course.
- Herbs: Adding herbs can elevate the flavor of your potato wedges. If you're using fresh herbs, sprinkle them over the wedges towards the end of the cooking process to preserve their flavor and prevent burning. In contrast, dried herbs are more resilient and can be mixed in with your other seasonings before cooking.

Spicy Potato Wedges
Indulge in oven-baked Spicy Potato Wedges - a perfect blend of crispy, spicy, and utterly delicious! Ideal for any meal, these wedges will be your new favourite side.
Ingredients
- 800g (28oz) of yukon gold, maris piper or russet potatoes, skin on
- low calorie spray oil
- 2 teaspoons sweet paprika (use a mix of sweet and smoky paprika is you like a smoky flavour)
- 1 teaspoon salt
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ½ teaspoon cumin
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (adjust according to your spice preference)
Instructions
- Wash potatoes thoroughly and slice into wedges.
- Add wedges to a large bowl, cover with cold water and soak for 30 minutes
- Drain, rinse thoroughly and pat completely dry with kitchen towel.
- Preheat oven to 200c fan. 220c, 430f
- Place wedges in a large bowl and spray generously with low calorie spray oil
- Add in the seasonings
- Toss to coat and spray again generously with low calorie spray oil
- Line a large baking tray with parchment paper.
- Spread the wedges out on the tray well spaced apart.
- Bake for 20 mins, take out, turn and then spray again with some low calorie spray oil and bake for another 20 mins (40 mins total) until lovely and golden in colour.
- Season with more salt to your desired taste if needed.
- Serve with your choice of main, or enjoy these just as they are with a salad
