- Pat the Chicken Dry - Make sure to pat the chicken breasts dry with kitchen paper before adding them to the slow cooker. This helps the seasoning stick and prevents excess water from diluting the sauce.
- Cook Chicken Breasts Whole - Keep the chicken breasts whole during cooking for the best texture. Once they’re fully cooked, slice or shred them before adding back to the pasta and sauce.
- Don’t Skip the Olive Oil - Olive oil is essential for the texture of the sauce. Leaving it out can result in a thinner or split sauce.
- Add Milk and Cream Cheese at the Right Time - After cooking the chicken for 2.5 hours, remove it and whisk in the cream cheese into the sauce. Make sure it is fully melted, then stir in the milk until combined before adding the chicken back in.

FAQ for Slow Cooker Creamy Cajun Chicken Pasta
While you could reheat it in the microwave or on the stove. Slow cooker pasta can become a little soft when reheated, so it is best enjoyed fresh if you can. If needed, add a splash of milk to loosen the sauce. The same goes for freezing, frozen reheated pasta can be a bit mushy. For the best texture and flavour, it is ideal eaten soon after cooking.
Can I use ready-made Cajun seasoning instead?
Yes, you can, but the flavour will be slightly different. This recipe uses my own blend for taste, and different brands can impart their own flavour profile. If swapping, you will want around 2 tablespoons of ready made Cajun seasoning.
I don’t recommend leaving it out. Olive oil helps with the texture of the sauce. Skipping it could also make the chicken a little drier in texture.

Slow Cooker Creamy Cajun Chicken Pasta is an easy, all-in-one meal with tender chicken, a light creamy sauce, and pasta cooked right in the slow cooker.
Ingredients
For the seasoning:
- 1 tablespoon of paprika
- 2 teaspoons of garlic powder
- 1 teaspoon of smoked paprika
- 1 teaspoon of oregano
- 1 teaspoon of onion powder
- ½ teaspoon of salt
- ½ teaspoon of thyme
- ½ teaspoon of cayenne pepper
- ½ teaspoon of black pepper
For the pasta:
- 500g (17.6oz) Boneless Skinless Chicken Breasts
- 1 tablespoon of olive oil
- ½ red bell pepper, finely chopped
- ½ green bell pepper, finely chopped
- 1 cup (240ml) of 2% milk
- 100g (3.5oz) of light cream cheese, cubed
- 2 cups (480ml) of chicken stock (I use better than bouillon)
- 240g (8.4oz) of uncooked penne pasta
- 50g (1.7oz)of parmesan, finely grated
- fresh finely chopped parsley (optional) to garnish
Instructions
- In a small bowl, combine all the seasonings.
- Pat the chicken breasts dry with kitchen paper, then place them in the slow cooker. Add the olive oil and seasoning mix, and stir to coat the chicken evenly.
- Add the peppers and pour the stock over the top ensure everything is covered.
- Cook on high for 2.5 hours.
- Remove the chicken breasts and roughly slice them into pieces.
- Add the cream cheese to the slow cooker and whisk until melted and combined. Stir in the milk
- Return the chicken to the slow cooker along with the pasta. Cook on high for 30 minutes, or until the pasta is tender.
- Stir in the Parmesan, then garnish with chopped parsley.
- Serve and enjoy.

Hi, in general you can adapt slow cooker recipes for the oven. For this one, it would be about 1 to 1.5 hours in a Dutch oven at 170°C fan / 190°C / 375°F. However, please note that this recipe has only been tested in a slow cooker, so I can’t guarantee the exact results if cooked in the oven.
