Here in Canada, I often prefer turkey or chicken sausages. They come in decent sizes and are available in Mild or Hot Italian varieties, which complements this casserole wonderfully. Vegetarian sausages are also an excellent option, catering to vegetarians. While pork sausages are typically flavourful, they tend to be higher in calories. Opting for a low-fat type may help reduce the calorie content, but it can result in a slightly dry texture when cooked.

Sliced or Whole Sausages in a Casserole?
If you're opting for a high-quality sausage that may be higher in calories, a helpful trick is to slice it into small pieces rather than adding it whole into the casserole. Slicing the sausage allows it to stretch further, as you won't need to use as much sausage.
I often employ this technique when preparing this casserole if I'm unable to find a low-fat sausage. It's just as flavourful, and my kids adore it, as the small sausage slices resemble mini sausage meatballs.
However, when I manage to procure some of my favourite Mild Italian Turkey Sausage, I add them in whole for an extra delicious touch to this Sausage Casserole.
Sides for Sausage Casserole
If bread is a weakness for you with a casserole or stew, a great way to combat the craving for something starchy like that with your casserole is to serve it alongside some crispy Roast Potatoes or this Garlic and Herb Roast Potatoes.
or one of my favourites sides to serve alongside this is this delicious Rustic Garlic and Parmesan Mash there is also this Mashed Potato and Mashed Sweet Potato if you prefer just regular mashed potatoes.

Hearty Sausage Casserole
Delicious Sausage Casserole - There is nothing more comforting than digging into a hearty dish of sausage casserole - it's a family winner!!
Ingredients
- 1 large onion, chopped
- 2 cloves of garlic, crushed
- 200g (7oz) of butternut squash, cubed
- 6 low calorie sausages (I used Italian turkey sausage)
- ½ red pepper, sliced
- ½green pepper, sliced
- 1 small courgette (zucchini), quartered and sliced
- ½ cup (80g) of frozen peas
- 2 tablespoons of tomato paste
- 1 teaspoon of mixed herbs
- 1 tablespoon of balsamic vinegar (good quality brand)
- ½ teaspoon of tabasco sauce (can add more if you like it spicier)
- 1 cup (240ml) of chicken or vegetable stock - (use slightly less stock for slow cooker method)
- 400g (14oz) can of cannellini beans (with juice) - or another white bean of choice
- low calorie spray oil
- Salt and black pepper to season.
- handful of fresh parsley, finely chopped
Instructions
Stove Top:
- Spray a large casserole dish with some cooking oil over medium heat.
- Brown the sausages lightly on all sides, removed and set aside
- Spray with some more cooking oil spray, add the onion and fry for a couple of minutes to soften.
- Add in the balsamic vinegar and a little of the stock and deglaze the pan scraping off any bits stuck to the bottom of the pan.
- Add in the butternut squash, peppers and garlic, plus the mixed herbs, tomato paste, tabasco sauce, stock and can of cannellini beans (including juice)
- Bring to a boil, then reduce heat to a simmer. Place in the sausages, cover and simmer for 40 minutes.
- Add the peas and courgette for the last 5 mins of cooking time.
- Taste and season with salt and black pepper.
- Sprinkle with fresh chopped parsley. Serve with your choice of sides.
- Enjoy
Slow Cooker:
- Brown sausages and onion as per steps 1-4 above.
- Add to a slow cooker with all other ingredients, apart from peas and zucchini
- Cook on low for 6 hours.
- Add the zucchini and peas in for the last hour of cooking time.
- Taste and season with salt and black pepper.
- Sprinkle with fresh chopped parsley. Serve with your choice of sides.
- Enjoy
