Bread Recipes using Oats
This week I had serious cravings for Garlic Bread. There are various options out there for making a Slimming Eats friendly garlic bread, but none really cut it when those cravings get the better of you.
I've had great success making bread using my healthy extra of oats. So far I have given you these amazing recipes:
and had the great idea to have a go at a Pull-Apart Garlic Bread. The great thing about using oats is they are high in fibre and protein and are a whole food, so a much better option over white bread or heavily processed wholemeal bread.
Making the Pull-Apart Cheesy Garlic Oat Bread
First I mixed the ingredients for the bread - oats, yoghurt, egg, a pinch of salt and baking powder. Simple ingredients, nothing complicated or unhealthy, and can even be gluten free if you use gluten-free oats.
You will need a blender or food processor to grind the oats. I use the cups of my Nutri Ninja Blender with Auto IQ. This blender is amazing. The auto IQ technology feature, mean it blends to a set pattern depending on what it is you are making. There is also an optional add-on for a food processor bowl, which is perfect for chopping and grating vegetables. Sauces and soups are literally so smooth, once complete in this amazing kitchen gadget. You can also use a mini food processor to grind the oats.

Baking the Pull-Apart Cheesy Garlic Oat Bread
Then I baked the bread, to get a delicious Loaf. Enough to serve 3, as I was just cooking for me and the kids tonight.
Ensure you don't use a dish that is too big, otherwise your mix will just spread out and be flat, you want it to rise up so you need a oval or loaf shaped oven proof dish that is around 18-20cm in length, no bigger. I also use parchment paper to ensure the bread doesn't stick and is easy to remove.
Once baked, I left it to cool slightly and then scored it in diagonals, both ways, making sure not to slice all the way through. Then carefully open up each crack and give it a little spray of spray oil. I also sprinkle with a little pinch of salt into the scores (this is optional).
Next came the mix for that amazing Cheesy Garlic Bread flavour. In a bowl I mixed mozzarella and good quality white cheddar, chopped fresh parsley, a little bit of spray oil and that all important ingredient - Garlic!!! as of course it just wouldn't be Garlic bread without it.
Crumble up all the mixture with your hands so everything gets combined together, and you will be hit with that amazing wonderful aroma that you just know is going to be amazing.
Then getting little spoonfuls of the cheese garlic mixture, push it down into the slits in the bread and place bake in the oven for about 10-12 mins until the cheese has melted and is lightly golden.

How can I include healthy vegetables with this yummy Garlic Bread?
That's really easy - I like to enjoy a serving of this instead of a sandwich Pull-Apart Cheesy Garlic Bread with a healthy vegetable packed bowl of soup for a balanced meal.
Pasta is also a great dish to serve with this especially Spaghetti Bolognese or Meatballs and pasta, but it's good to be mindful of the calories in the bread. If having with bolognese or meatballs. I tend to have a small piece instead of a ⅓.

Pull-Apart Cheesy Garlic Bread (made with Oats)
Everyone will go crazy for this Pull-Apart Cheesy Garlic Bread - a perfect cheesy bread for lunch, as a sharing side or party appetizer
Ingredients
- 120g (4.3oz) of Oats (rolled or quick)
- 1.5 teaspoons of baking powder
- pinch of salt
- 2 large eggs
- 120g (4.3oz) of Fat-Free Plain Greek Yoghurt
- cooking oil spray
- 50g (1.8oz) mozzarella, grated
- 60g (2.2oz) of strong white cheddar, grated
- 2-3 cloves of garlic, crushed
- fresh finely chopped parsley
Instructions
- Preheat oven to 180c/fan 160c/350f (gas mark 4)
- Blend the oats in a blender or food processor until a fine powder.
- Add to a bowl with the baking powder, a pinch of salt, Greek yoghurt and eggs.
- Line baking dish with parchment paper.
- Pour in the mixture and place in the oven, bake for 40 mins, skewer entered into the centre should come out clean.
- Allow to cool.
- Increase oven temp to 200c/fan 180c/400f (gas mark 6)
- Add the cheddar, mozzarella, garlic cloves, fresh parsley to a bowl, and crumble all together with clean hands.
- Once bread is cool, using a sharp knife, cut slits diagonally (making sure not to go all the way through the bread), carefully pull slits open, season with a little salt and spray with a little spray oil.
- Stuff with the cheese garlic mixture.
- Place back in the dish and bake for approx 10-12 minutes, cheese should be melted and lightly golden.
- Serve warm, dig in, pull-apart and enjoy!!

I don't have a food processor or a blender - is it possible to make these using oats which are already ground? Such as ready brek?

Ready brek is not 100% oats, it also contains flour so might not be syn free as Shevy's recipe.

I think Ready Brek is now a Healthy Extra B the same as oats in the UK. But without testing it, I can't confirm for sure it will work. It might make a difference to the taste too.

Hi. I've just made two of these and they look and smell delicious. Hubby loves them but I find them really sour. Do you think I could add honey or artificial sweetener to the mix? I can't abide natural yoghurt but I so wanted some bread! Many thanks. Your recipes are amazing by the way x

Did you use plain greek yoghurt? There really shouldn’t be a big sour taste to this with the cheese and garlic added etc. But yes you could try a little sweetener to see if that helps.

I have this saved to try later, but I mentioned it in group this morning and my group consultant immediately jumped on the fact that you class it syn free. I mentioned the HeA factors for the cheeses and she said that the bread would come in with a hefty 18 syns. I want to try the recipe out but am a little bit put off by my consultant's comments. I thought it would be good to share it with the group as I know some members have a real craving for ordinary bread. Can you clarify the syns for the bread? I am going to go ahead and make it anyway because I have a busy week ahead and it will be a good lunchbox addition. I'm looking forward to trying many more recipes from the Slimming Eats website, (or through YouTube).

Hi Colin - this recipe is Syn Free when using your Healthy Extra A for the cheese and Healthy Extra B for the oats. It serves 3 and so a 1/3 of the recipe is a serving, so your consultant must be slightly confused thinking you are eating the whole bread.

Hiya. Just a query about blending the oats into a fine powder. I assume this is to replace flour but wouldn't this be classed as a tweak and therefore be synned as a flour?

Hi Laura - tweaks only apply to free foods. As this is a healthy extra and a measured amount, it is not a tweak, because you are limited to the amount you can have. Tweaks are when you use free foods to make synned foods, like lasagne sheets to make Doritos, smash to make scones, couscous to make cakes etc.

Hi June - 1 healthy extra equates to 6.5 syns so without using your healthy extra's it would be pretty high in syns.

No I definitely used baking powder. Is 1.5 tsp the correct amount of baking powder to use. Two other people have tried this recipe and had the same results. Looks totally yummy and I miss having garlic bread so desperate to get it right.

Yes the measurement of baking powder is correct. Make sure your dish is not too big. I give dimensions on the blog post. Also make sure you are not opening the oven while it bakes or taking it out too soon. You just need to come on my Facebook group and search garlic bread to see this made successfully by many members. So I’m not sure why it isn’t working for you. Double check you have all the measurements correct and are not doing any of the above. The size of the dish is definitely important, as if it’s too big, it will spread outwards instead of upwards.

I would freeze before the second bake when you add the cheese, and then cook for the specified time to ensure it doesn't over cook.
