Creamy Pesto Veggie Pasta
You know that feeling when you get back from a holiday, fridge is bare and you have to pop out to get groceries and by the time you get home and put everything away, you just want a quick and simple meal on the table.
This Creamy Pesto Veggie Pasta is exactly that, all cooked in one pot, with limited ingredients. It's a great recipe that can be followed exactly or adapted to taste with various swaps or additions.
The Best Green Pesto
First things first, what is the best green pesto? I have tried many different varieties in my time and while I do sometimes make my own, like this Arugula, Basil and Spinach Pesto or this Creamy Pea Pesto occasionally you just want the ease of opening a jar and there are some really delicious good quality ones out there.
I recommend hunting for your favourite brand, so you know which one to choose and stick to it, some I find are just too oily or do not have the best flavour and it took me a while to find one I really liked when I moved to Canada. My all time favourite is this Costco Kirkland Signature Pesto. My kids especially love this one, and it is great to have on hand for when they want a quick pasta meal. Unfortunately I don't think this one is available in the UK, but there are various great brands available.
Best Pan for One Pot Dishes
When it comes to one pot dishes, you really need to ensure you are using the correct type of pan, so that it cooks evenly and doesn't take forever. I do not recommend a shallow frying pan or a small deep saucepan.
Either use a extra large saucepan which has a wide circumference or use a wide deep frying pan. That way the heat penetrates everything evenly for it to bubble and reduce down.
The liquid amount is accurate, so if it is not reducing down or is taking ages to cook the likely culprit is the wrong pan or heat that is far too low.
These All-clad pans are brilliant for one pot dishes and are one of my favourite brands to use.

Can I add more pesto to this dish?
Wondering if you can add more pesto to this one pot recipe? Adjust it however you like, I added 3 tablespoons which gives just enough of that pesto flavour, but if you want to add a little more or less then please do, that's the beauty of dishes like this.
What vegetables go with Green Pesto?
I added some courgette (zucchini), onion and frozen peas to this one pot recipe, it was what I had and compliments the creamy pesto flavour well. But there are so many different vegetables this would work well with. Here are some other suggestions:
- Asparagus
- Green Beans
- Shredded Brussels
- Spinach
- Kale
- Broccoli
Best Protein for Pasta
Want to add in some protein to this recipe? Here are a few suggestions that I think will work well with this recipe:
- Cooked Chicken
- Pork
- Shrimp (Prawns)
- White Beans or Chickpeas
- Quorn or other meat substitute
If you are using a cooked protein, you can simply just stir it in, otherwise you may need to cook (brown) first.
Sides for Creamy Pesto Pasta
This yummy one pot pasta dish can be enjoyed just as it is in a bowl or you can pair with some additional vegetables on the side.
I went for a simple side salad which I served in the middle of the table for everyone to help themselves to. The salad had the following items:
- Baby Greens
- Shredded Carrot
- Cucumber
- Sliced yellow peppers
- Tomatoes
But you can mix and match with whatever salad items you like.

One Pot Creamy Pesto Courgette Pea Pasta - a simple delicious all in one pan pasta meal that will become a regular feature on your meal pan.
Ingredients
- 1 medium onion, finely diced
- 1 large courgette (zucchini), quartered and sliced
- 3 tablespoons of green basil pesto
- 200g of uncooked pasta (I used fusilli)
- 1 litre (4.25 cups) of chicken or vegetable stock
- ¾ cup of frozen peas
- 4 tablespoons of light cream cheese
- salt and black pepper
- olive oil spray
Instructions
- Spray a large deep frying pan over a medium high heat with olive oil spray.
- Add the onion and fry until golden and softened.
- Add in the zucchini and fry for a couple of minutes.
- Season with salt and black pepper, then stir in the pesto until all coated.
- Add the uncooked pasta, stock and frozen peas.
- Bring to a boil, then reduce hit slightly and allow to simmer (should still be bubbling) until stock is almost absorbed and pasta is cooked.
- Stir through cream cheese until all melted and creamy.
- Taste and season with salt and black pepper if needed.
- Serve and enjoy!!
