Mustard Beef with Mushrooms
Rich Mustard Beef with Mushrooms - the perfect meal for the whole family
Ingredients
- 455g (1lb) of extra lean ground beef
- 225g/8oz of fresh baby Portobello mushrooms (or chestnut mushrooms) - do not use frozen
- 2 red onions, sliced finely
- 3 cloves of garlic crushed
- 400ml of beef stock and 80ml for browning mushrooms/onions (480ml/2cups in total)
- 1 tablespoon of wholegrain mustard
- 1 tablespoon of arrowroot flour
- pinch of dried thyme
- 1 tablespoon of balsamic vinegar (good quality aged)
- 2 tablespoons of tomato puree (paste
- salt and pepper to season
- fresh chopped Italian parsley to serve
Instructions
- Add the ground beef to a frying pan over a medium high heat, seasoned with salt and black pepper and fry until browned. Transfer to another dish and set aside.
- Spray the frying pan with some spray oil.
- Add the onions and garlic and cook until softened.
- Add the mushrooms and a little bit of the stock at a time, and continue to cook until the onions and mushrooms get nice and caramelized. Don't skip or rush this stage, caramelization is important and what adds depth to the sauce.
- Return the mince to the pan, along with a sprinkling of thyme, tomato puree (paste), balsamic vinegar, mustard, remainder of stock and a good pinch of salt and pepper to season.
- Mix the cornstarch with a couple of teaspoons of water and add this into the pan (it will thicken the sauce).
- Bring to a boil and then reduce heat and simmer for approx 20mins
- Serve topped with parsley and your choice of sides.
- Enjoy!!

I made this in my slow cooker (crock pot) and it was delicious!
6 hours on low.
I dry fried the mince first to brown it & added the cornflour at the end to thicken it.
It turned out perfect & will definitely cook it again!

Super simple weeknight dish. Really enjoyed it. Used a little less mince meat and added cauliflower rice at the moment I returned the meat to the pot. Was lovely with cauli mash.
PHILLIP MULLEN says
Outstanding! I did it as a pot roast. Browned the pot roast in a dutch oven, sauteed onions, carrots and mushrooms. Placed in the oven, at 350, for 3 hours. It was so delicious! Your recipe made the most delicious sauce/gravy. I'll be making this every month. Thank you!

Hi,
This looks amazing, but I just want to clarify one ingredient, as I know names can vary according to countries...
The recipe calls for 2 tbsp tomato puree (which where I am is basically blended up cooked tomatoes) but by the richness off the colour of the dish I am wondering if you mean what I would call tomato paste, a much more concentrated tomato product?
Hope that all makes sense. Looking forward to trying this once I have clarified this ingredient.
Thanks
Siobhan (Slimming Eats) says
yes tomato puree is tomato paste - enjoy!!
Linda says
Do you think I could use left over beef roast in this recipe instead of ground beef?
Siobhan (Slimming Eats) says
you could certainly give it a try, let me know how it turns out .
Colin Curtis says
Will be making this tomorrow,
It sounds delicious, and I know it will taste delicious
