I love it chunky style and it feels more like a complete meal. A great comforting meal for the fall or winter weather.

Minestrone Soup
Minestrone Soup - hearty soup packed with healthy vegetables, potato and pasta.
Ingredients
- 3 garlic cloves, crushed
- 1 large onion, chopped
- 2 celery sticks, chopped
- 2 large carrots, halved and chopped
- 2 small yukon gold potatoes, peeled and chopped
- 2 small courgette (zucchini), chopped
- 8 cups (2 litres) of chicken or vegetable stock
- 3.5 cups (840ml) of canned plum tomatoes
- 2 tablespoons of tomato paste
- splash of balsamic vinegar
- 1 cup (171g) of ditalini pasta (or similar shaped pasta)
- 2 teaspoon of Italian herbs
- salt and pepper
- cooking oil spray
- fresh chopped Italian parsley
Instructions
- Spray a large sauce pan with some spray oil
- Add the onions, celery, carrots and garlic and fry for about 5 mins until softened.
- Add the courgette, tomatoes (break them up with a wooden spoon), tomatoes paste, vegetable stock, Italian herbs, and balsamic vinegar.
- Bring to a boil, then reduce heat, cover and simmer for approx 40 mins
- Add in the potatoes and pasta and simmer until cooked.
- Season as needed with salt and black pepper
- Top with some freshly chopped Italian parsley
- Serve and Enjoy!!
- (If you like a smooth soup, you can blend it all, before adding in the potatoes and pasta, I prefer to leave it chunky)
- Optional: if you have a HEa spare, this is delicious topped with some grated parmesan cheese
- NOTE: When heating up the next day, you may need to add more stock, as it will thicken from the starch from the potatoes/pasta

lovely i used ham stock cube as had no vegetable ones. will make again but will precook potatoes as i found they took a long time to soften and had to add more water to prevent sticking

It can indeed, the only slight issue is the pasta will swell up the more it is cooked, so it tends to really thicken up the soup.

Hi, I made this soup, it was wonderful, however it became a different creation altogether because I left it too late to be a soup, so it quickly became minestrone stew with shredded chicken.

Excellent soup - my hubby sand I loved it! I usually make traditional soups for lunches (potato & leek, veg broth etc) but this was a great tasty change.
Our problem is not having bread. My hubby had a cholesterol test which was a bit over normal, so trying to eat healthy and reduce portion sizes too. Hubby can’t stand food without sauces so trying to make healthy ones! I’ve had back problem so not exercising much which doesn’t help either.
