- Garlic: For convenience, I opt for jarred minced garlic. If you prefer fresh garlic, note that 1 teaspoon of jarred minced garlic is equivalent to 1 clove of fresh garlic.
- Lamb Mince: To maintain a lower calorie count, I opt for lean lamb mince (ground lamb) with 10% fat content, which is typically as lean as you can find for lamb mince. While it may seem like a concern, when divided into four servings, the calorie amount per serving is quite reasonable.
- Egg: just 1 fresh large egg, this helps bind the mixture of the kofta together.
- Spices/herbs: various spices are used to make this curry, such as ground cumin, coriander, turmeric, chilli powder, turmeric, mint, cloves, cinnamon, bay leaves and cardamon pods.
- Chicken Stock: I favour chicken stock for its milder flavour and widespread availability. However, feel free to use lamb stock if you prefer. It's essential to use the correct ratio of stock cubes to water, as not all stock cubes are identical. Using too few can lead to a bland, watery broth, while too many may create a stock that's overly salty.
- Tomato Paste (Puree) - this is concentrated tomato paste
- Yoghurt: It's important to use plain, fat-free yoghurt (not Greek yoghurt) in this recipe, as different types of yoghurt may not produce the desired consistency in the curry sauce.
- Cornstarch (Cornflour): This thickening agent is crucial for preventing the yoghurt from curdling in the hot curry sauce, ensuring a smooth and silky consistency

Ingredients
For the Koftas:
- 500g (18oz) of 10% fat lean lamb mince
- 1 large egg
- 1 small onion finely chopped
- salt and black pepper
- 1 teaspoon of minced garlic (or 1 garlic clove)
- low calorie spray
For the Curry Sauce:
- 2 onions, finely chopped
- 2 teaspoon of minced garlic
- 2 teaspoons of grated fresh ginger
- 100g (3.5oz) courgette (zucchini), finely diced
- 2 teaspoons of ground cumin
- 2 teaspoona of ground coriander
- 1 teaspoon of hot chilli powder
- 1 teaspoon of paprika
- 1 teaspoon of garam masala
- ½ teaspoon of turmeric
- ¼ teaspoon of ground cloves
- ¼ teaspoon of ground cinnamon
- 5 green cardamom pods
- 1 bay leaf
- 2 tablespoons of tomato paste
- 480ml (2 cups) of chicken stock
- 1 teaspoon of granulated sweetener
- salt and black pepper to season
- low calorie spray
For the mint yoghurt
- 150ml of fat free plain natural yoghurt
- 1 tablespoon of mango chutney
- 2 teaspoons of cornstarch
- 1.5 tablespoons of fresh finely chopped mint
- 1 teaspoon of lemon juice
Instructions
- Combine the ingredients for for the mint yoghurt in a bowl and set aside.
For the mint yoghurt:
- Fry a large deep frying pan with low calorie spray
- Add the onion and garlic and fry until golden and softened. Remove and set aside to cool slightly.
- Add the lamb mince to a large bowl, season with salt and black pepper, then add in the egg and onion/garlic mix and mix to combine. Form into 16 meatballs.
- Spray the frying pan with more low calorie spray and brown the Koftas on all sides. Remove from frying pan and set aside.
- Spray the frying pan with more low calorie spray. Add the onion, garlic and ginger to the frying pan and cook for approx 5 mins until softened. Add the courgette and cook for a further couple of minutes.
- Add in the all the spices for the sauce (except for the cardamom pods and bay leaf). Fry a minute just to cook the spices (don't burn)
- Add the tomato paste, sweetener, stock and drop in the cardamon pods, bring to a boil and simmer for 5 minutes
- Stir the mint yoghurt mixture into the sauce until all combined, then drop in the meatballs, add lid and simmer for 12-15 minutes until the sauce is thick, creamy and silky in appearance.
- Taste and season as needed with salt and black pepper
- Serve and enjoy!!
