Feast your eyes on these Honey Garlic Chicken Lettuce Wraps - A perfect quick and tasty dish for lunch or dinner
For some, lettuce or greens of any kind can be a little boring - most will say they are bland and have no place on a plate and when I was younger I quite possibly would of agreed. I mean most kids do not enjoy any type of food that is green, right?
But as I got older and my taste for foods changed and I started to cook for myself, I actually discovered that when made or used in a way I enjoy, there are actually very little foods I do not like or will not at least try.
I love greens, actually if my plate doesn't contain some kind of greenery, it looks bland and boring. See what I did there?
But lettuce and greens do not need to be kept for just salads, in fact more and more people are starting to use them for all kinds of things, like a wrap for a bunless burger, tacos etc in an attempt to create a more balanced and healthy plate.
When I did a a short stint of paleo a few years ago for health reasons, lettuce wraps were a regular thing for me. Most food places now will make you a bunless burger if you ask, wrapped in lettuce leaves instead of the usual burger bun. Hey - there are even some sub sandwich places where you can build your sandwich, but have all your filling in between two big leaves of romaine instead of the sub roll.
You might think - hell if I am treating myself and eating out, I ain't gonna order no burger or sandwich wrapped in lettuce. But sometimes we have to remember this is a life long journey and occasionally we do need to make the healthier choices.
So when making lunch today and doing a week of Slimming SP, I really wanted something quick and easy. I knew whatever it was would be using up that leftover cooked chicken in the fridge, but I hadn't yet decided what to serve it with.
A stir fry is nice and quick, but I really hadn't prepped any of my Roasted Cauliflower Rice and didn't really have the time to make some veggie noodles. So decided on just add the mixture to some lettuce wraps for a delicious and healthy lunch.
Yummy Honey Garlic Chicken Lettuce Wraps to be exact. A perfect meal for a Slimming SP day or if you just want a healthier meal to balance out your day.
I recommend using a crunchy variety of lettuce for these Honey Garlic Chicken Lettuce Wraps - something like romaine, Boston or Green Leaf lettuce.
To keep this gluten free use Tamari (a gluten free soy sauce) or if paleo use coconut aminos.
The filling is pretty simple. I just make up the sauce using some honey, garlic and soy sauce, heat than in a pan or wok, just till it starts to reduce down and thicken and then all that is left to do is throw in the cooked chicken, stir to coat, spoon onto the wraps and sprinkle with some chopped spring onion and a pinch of sesame seeds and they are done, super quick. Of course if you don't have cooked chicken, you can use raw chicken, it will just take little longer, as the chicken needs to be browned first. This would work well with ground chicken or pork too.

Honey Garlic Chicken Lettuce Wraps
This recipe is gluten free, dairy free, paleo, Slimming and Weight Watchers friendly

Gluten Free - use Tamari/gluten free soy sauce
Paleo - use coconut aminos
Ingredients
- leftover cooked chicken
- 3 lettuce leaves (Boston, romaine or other crunchy lettuce)
- 1 clove of garlic crushed
- 2 tbs of soy sauce (Tamari or Coconut Aminos)
- 1 tbs of water
- 2 teaspoon of honey
- 1 chopped spring onion
- pinch of sesame seeds
- spray oil
Instructions
- Spray a frying pan with some spray oil
- Add the garlic and fry for a minute just to infuse flavour.
- Add soy sauce (Tamari or coconut amigos), water and honey
- Heat until it starts to bubble and reduces down and thickens.
- Add in cooked chicken and toss to coat.
- Serve on crisp lettuce leaves, sprinkled with chopped spring onion and a pinch of sesame seeds.
