Delicious garlic mushrooms with bacon sauteed together in a pan and served over sourdough toast with a perfectly cooked poached egg. Great for breakfast or lunch
Sauteed Garlic Mushrooms
I love mushrooms, they are a great addition to any meal, but my all time favourite is for breakfast and these sauteed garlic mushrooms with bacon are just delicious.
When I can get my hands of baby king oysters I like to use those mixed with some regular mushrooms for the ultimate flavour, but you can use any mushrooms you like. A mixture of varieties will just add better flavour.
What type of Mushrooms are best for Sauté
You can use just basic white mushrooms for these garlic mushrooms and bacon, but for more flavour here are some other options:
- Oyster
- Large Portobello Caps (make sure you remove the black gills, otherwise you'll end up with a grey liquid around you mushrooms which is not desirable)
- Cremini or Baby Bella mushrooms
- Chanterelle
- Shiitake
- Enoki - these can be hard to source but are a great mushroom for frying.
Can I use lean back bacon?
If you want to reduce the calories you can use back bacon if you prefer, but there is a few things to bear in mind, back bacon is pretty lean so won't release that little bit of fat when it cooks, which is what you want for really caramelizing the mushrooms and adding flavour.
It's worth the extra calories for the streaky bacon and is a nice treat for breakfast that is still not to high on calories really.
Can I use whole wheat bread?
I used a slice of multigrain sourdough for this, as it just pairs so well and is really filling for one slice, but feel free to use any bread you like, if you are gluten free you will want to opt for a bread that is suitable for you.
Variations
Want a creamy version? just add in a spoonful of light cream cheese and stir until melted. It's heavenly!!
This is also delicious with some sliced avocado underneath the mushrooms and bacon or some guacamole.
or add a little sprinkle of finely grated parmesan to the top.
The best Poached Egg method
Most people can feel a bit overwhelmed trying to cook a poached egg, but I find my method really easy and always results in a perfectly cooked poached egg.
- Just Bring a saucepan of water to a rapid boil, then turn down heat a littler so that the water is no longer vigorously boiling.
- Stir the water to create a vortex
- Crack an egg into a shallow bowl and lower it gently into middle of the vortex in the water.
- Leave for approx 3 mins and then remove with a slotted spoon onto kitchen pan. I prefer to do this to remove any excess water.
Some methods add vinegar to the water, but if your eggs are fresh it's really not needed.

Sauteed Garlic Mushrooms with Bacon
Delicious garlicky mushrooms and smoked bacon sauteed together in a pan and served over sourdough toast with a perfectly cooked poached egg. Great for breakfast or lunch
Ingredients
- 1 slice of bread of choice (I used multigrain sourdough)
- 1 teaspoon of butter, melted
- 110g of mushrooms, chopped small (use two different types of mushrooms if you like for more flavour)
- 1 small shallot, finely diced
- 1 cloves of garlic, crushed
- 2 slices of smoked streaky bacon
- low calorie spray
- 1 large egg
- salt and black pepper
Instructions
- Spray a frying pan over a medium high heat with some low calorie spray
- Add the bacon and fry until lightly golden and crispy, then remove with a slotted spoon.
- Add in the mushrooms, shallot and garlic and fry in the bacon grease left in the pan until lovely and caramelized.
- Add back in the bacon and mix all together in the pan.
- While the bacon and mushrooms are cooking, you can cook the poached egg.
- Bring a saucepan of water to a rapid boil, then turn down heat a littler so that the water is no longer vigorously boiling.
- Stir the water to create a vortex
- Crack an egg into a shallow bowl and lower it gently into middle of the vortex in the water.
- Leave for approx 3 mins and then remove with a slotted spoon onto kitchen paper. I prefer to do this to remove any excess water.
- Toast the slice of bread and brush with the melted butter.
- Top with the garlic mushrooms, bacon mix and then the poached egg
- Season the top with salt and black pepper.
- Enjoy!!
