Easy Asian Meatball Stir Fry
This Easy Asian Meatball Stir Fry is a quick and flavourful weeknight dinner that brings tender meatballs and vibrant vegetables together in a glossy savoury sweet sauce.
Ingredients
- low calorie spray
- 400g (14oz) bag of frozen lean beef meatballs
- 1 onion, sliced thinly
- 1 carrot, julienned
- ½ red bell pepper, sliced
- ½ green bell pepper, sliced
- 2 cloves of garlic, minced
- ½ tablespoon of freshly grated ginger
For the sauce:
- 2 tablespoons of oyster sauce
- 1 tablespoon of dark soy sauce
- 2 tablespoon of light soy sauce
- 1 tablespoon of honey
- ½ cup (120ml) of water
- pinch of black pepper
- 2 teaspoons of sesame oil
- 1 tablespoon of cornstarch
To garnish:
- 2 scallions (spring onions), chopped
- 1 teaspoon of toasted sesame seeds
Instructions
- Heat a large frying pan over medium-high heat and spray with low-calorie spray.
- Add the frozen meatballs and cook until browned all over, then remove and set aside.
- Spray the pan with a little more low-calorie spray, add the onion, carrot, and peppers, and fry for about 3 minutes until just tender.
- Stir in the ginger and garlic and cook for another minute.
- Mix together the sauce ingredients in a small bowl.
- Return the meatballs to the pan, pour in the sauce, reduce the heat to medium, and let it bubble until the sauce thickens and the meatballs are heated/cooked through.
- Sprinkle with chopped scallions (spring onions) and sesame seeds before serving.
