Dorito Taco Salad
This Dorito Taco Salad is loaded with crunchy romaine lettuce, red onion, grape tomatoes, cheddar, avocado, my delicious homemade Catalina dressing, and crispy Nacho Doritos.
Ingredients
- low calorie spray oil
- ¾ cup (112g) of corn (canned or frozen)
- 1 teaspoon paprika
- ½ teaspoon of mild chilli powder,
- ¼ teaspoon of ground cumin,
- ¼ teaspoon onion powder
- ¼ teaspoon of garlic powder
- salt and pepper
- ¾ cup (130g) of kidney beans
- 1 romaine head, chopped
- 12 grape tomatoes, chopped
- ½ small red onion, diced
- 60g (2oz) of reduced fat cheddar, grated
- 60g (2oz) of avocado, diced
- 4 tablespoons of Homemade Catalina dressing
- 40g (1.5oz) of Nacho flavoured Doritos (can use stores own brand)
Instructions
- Heat a frying pan over medium-high heat and spray it with low-calorie spray oil.
- Add the corn to the pan along with all the seasonings and pinch of salt and pepper. Fry for a couple of minutes until the corn is coated and flavored. Then, add the kidney beans, mix well to combine, and turn off the heat. Set aside.
- In a large bowl, combine the lettuce, onion, tomatoes, and cheddar cheese.
- Add the corn and bean mixture to the bowl and toss until everything is well combined.
- When ready to enjoy, add the avocado and dressing to the salad. Toss to evenly coat, then sprinkle in the crumbled Doritos.
- Serve and enjoy your delicious Dorito Taco Salad!
