Cilantro Lime Dressing that you can drizzle on everything and anything without the guilt
Hey if you are going to make a salad then you have to have a dressing. So why not this creamy and delicious Cilantro Lime Dressing.
Seriously when I make up a batch of this I drizzle it on everything. You don't have to stick to just salad. Drizzle it on grilled chicken, fish, vegetables, even these yummy Sweetcorn Fritters. Gone are those days of boring salads that are just screaming "dress me PLEASE!!".
I don't know about you but I love mayonnaise, it's that creaminess that does it for me, I know many that hate it and I often look at them like they said the worst thing in the world when they tell me they do not like it. I mean how can you not LOVE mayonnaise.
However mayo can be pretty high in fat, unless of course you are using that really low fat stuff, but the taste just doesn't cut it for me.
So what do you do when you want a creamy dressing, but don't want the fat? Make this Cilantro Lime Dressing, that's what. This is my go to dressing, along with my ranch dressing. I make one of these weekly and keep in a jar in the fridge, they will keep for a couple of days, you just have to give it a little bit of shake in the jar each time before use.
I recommend using Greek yoghurt, otherwise it will be too runny and make sure you use fresh cilantro (coriander) - dried stuff will give you a horrid brown colour once you blend, and you won't want to pour that on anything, trust me. The fresh cilantro gives it that lovely vibrant and fresh green look.
To sweeten and take that little bit of tang away from the yoghurt I use a little sukrin: 1 (sukrin is a natural sweetener that has no aftertaste), it is my favourite sweetener to use, but you can use any of choice if you don't have any.
So why not make up a jar of this Cilantro Lime Dressing and get drizzling.

Creamy Cilantro Lime Dressing

Ingredients
- 1 cup of Greek yoghurt
- handful of fresh cilantro (coriander) - approx ⅓ cup
- 1 clove of garlic
- juice of half a small lime
- ¼ teaspoon of sea salt
- ½ tbs of sukrin:1 (or other sweetener of choice)
Instructions
- Add all ingredients to a blender
- and blend until smooth (with little flecks of green cilantro)
- Add to a jar with a lid and keep in the fridge
- If you don't have a blender, you can use a food processor or stick blender (add ingredients to a tall jar/container to blend with the stick blender)
- Drizzle over salads, chicken, fish etc

I made thus thinking, well I'll like it and the rest of the family will just have their usual favourite dressings, for a chicken salad that I made for dinner! Hmmm I was wrong, so wrong, the rest of the family, including fussy kids, LOVED the cilantro dressing (as I did) and everybody used it!!! Can see this becoming a family favourite!! Hi Gem - I would be worried it might split once defrosted. It is really easy and quick to make, so you could just reduce the ingredients slightly if you think you will get round to using it all.
