Simple but delicious sticky Chinese Five Spice Chicken Drumsticks - baked in the oven till golden and packed with flavour.
With some chicken drumsticks, de-skinned and ready to cook for dinner, I wanted a simple marinade with plenty of flavours to go this egg fried rice.
The Kids love the flavour of Chinese Five Spice, so making it into a sweet marinade I just knew would get a thumbs up from the kids and these sure were a perfect hit.
Usually, for a sticky sauce of some kind, sugar or honey is needed, but trying to be a little healthier for tonight's dinner. I decided to sweeten the marinade using some dried dates. They work perfect and turn this sauce into an amazing syrup that flavours the chicken beautifully.
I use my handy little Kitchenaid Mini Food Processor to whizz up all the ingredients for the marinade. It's perfect for making pastes for curries and marinades for recipes like this Chinese Five Spice Chicken.
Of course, if you don't have a mini food processor or similar, you might want to replace the dates with brown sugar or honey, otherwise, the dates won't be finely chopped enough to make the sticky marinade.
If you have time to let the chicken sit in the marinade for a couple of hours then definitely do, but even when rushed for time, just poured the marinade over the top of the chicken basting at intervals works fine also.

HOW CAN I ADD A ⅓ VEGETABLES TO THIS CHINESE FIVE SPICE CHICKEN?
Instead of the egg fried rice that the kids had, I had some egg fried spaghetti squash instead. It was a perfect side dish for the chicken. Another option is this yummy Cauliflower Egg Fried Rice or keep the rice and add in some stir-fried greens of choice, like broccoli, shredded cabbage, bok choy, sugar snaps peas, bean sprouts etc.
