A quick to make Asian Chicken with Noodles - perfect for when you need to make dinner in a short space of time.
Chicken Noodles with Vegetables
I love stir fry dishes and asian inspired meals, most take minimal time to prepare and can be cooked in just a couple of pans, one for the chicken and vegetalbes and a pan for the cooking the noodles, meaning not only is it quick to get on the table, but also quick to clean up after too.
This simple chicken with noodles combines some tender chicken thighs, with a simple Asian style marinade, tender vegetables and then some noodles (I like brown rice noodles or buckwheat for this recipe). It's a true winner for kids too. I mean what is not to like about chicken and noodles?
Best Noodles for Stir Fries
There are lot of great choices of noodles nowadays. Long gone are the days where we only used egg noodles, or so it seemed anyway.
Egg noodles are great is the recipe of course, but just be aware weights of different varieties of noodles can vary.
As mentioned in this recipe I like to use brown rice noodles or buckwheat noodles, but you can also get noodles made from lentils, pumpkin, black beans and edamame. Great variety and selection available.
Substitute for Sambal Oelek
You will noticed I use an ingredient called Sambal Oelek in this recipe, which is an Indonesian chilli paste that adds a great kick of spice and flavour to a dish.
If you are not new to my recipes, you have probably already heard of it, as I use it in these Chilli Beef Noodles which are really yummy by the way.
Can't find this anywhere or want a quick substitute? Just use a pinch or two of chilli flakes (depending on your preferred spice level). Not quite the same flavour, but will work okay.
Vegetables for Stir Fries
In this noodle dish I use carrots, peppers, mushrooms and shredded cabbage, along with some green spring onions.
But when I want to save even more time, I will buy a mixed bag of stir fried vegetables. The ones that are just vegetables not with any oil or marinades etc.
You can also sometimes find freezer ones which are another handy item to have in your freezer.
Can I use Chicken Breast?
I use boneless and skinless thighs in this recipe, they just stay much more tender, get a deep colour and absorb more flavour.
However if you prefer to use chicken breast, that is totally fine too. I would just ensure you don't over cook it.
Pork, beef and shrimp are also other great alternatives.
The Best Dark Soy Sauce
If you are wondering why you don't have the same deep colour as seen here, the most likely answer is the brand of dark soy sauce you are using.
Firstly when it comes to dark soy sauce, make sure it actually says "dark" on the bottle, just regular soy sauce is not the same.
Secondly opt for Chinese brands instead of supermarket ones, the Chinese brands are far superior quality in deepness of colour and flavour. Two of my favourite brands are Pearl River Bridge or Lee Kum Lee.

Asian Chicken with Noodles
A quick to make Asian Chicken with Noodles - packed with flavour and perfect for when you need to make dinner in a short space of time.
Ingredients
- 350g (12.5oz) boneless and skinless chicken thighs, trimmed of visible fat and sliced into small pieces
- 150g (5.5oz) of noodles (I use buckwheat or brown rice)
- 2 tablespoon of light soy sauce
- 1 tablespoon of dark soy sauce
- 1 tablespoon of Shaoxing wine (or dry sherry if you can't get this)
- ½ teaspoon of freshly grated ginger
- 2 cloves of garlic (crushed and chopped finely)
- ½ teaspoon of Chinese five spice
- 1 tablespoon of maple syrup (or honey)
- 1 teaspoon of sesame oil
- 1 teaspoon of sambal oelek (or use some red chilli flakes)
- 1 carrot, sliced into thin batons
- 1 red pepper, sliced thinly
- 100g (3.5oz) mushrooms, sliced
- 100g (3.5oz) cabbage , shredded
- 2 spring onions, finely sliced
- cooking oil spray
Instructions
- Put the soy sauce, Shaoxing wine, ginger, garlic, honey, five spice, sambal oelek and sesame oil into a bowl.
- Add the chicken and mix well to coat.
- Cook the noodles according to package instructions
- Spray a wok or frying pan over a medium high heat with olive oil spray
- Fry the veg until tender, remove and set aside.
- Add the chicken with marinade to the pan and saute until chicken is cooked and a lovely deep glossy colour.
- Add back in the vegetables and the cooked noodles and toss to coat in all the sauce.
- Sprinkle with some chopped spring onions.
- Serve into bowls and enjoy!!

lol, it was really yummy. I adapted the chicken recipe out of a book I have to make it suitable for slimming world and was thinking hmmm what can I add to my salad and saw some lovely red seedless grapes peering at me from the fridge. So though what the heck i'll add some of them and surprisingly it really worked. I will definately be doing this recipe again.

Hi Michelle, I use kikkomann, which is neither light nor dark, but if choosing between light and dark, definitely choose dark.
