- Breadcrumbs: I make my own using some wholemeal bread
- Seasonings: just regular paprika, salt and black pepper and onion powder
- Eggs: fresh medium eggs
- Low Calorie Spray: I prefer to use olive oil spray without any added emulsifiers.
- Light Cream Cheese: I use Philadelphia, but any store brand is fine. Do not use quark, must be cream cheese.
- Chicken Stock: It's crucial to use the right ratio of stock cubes for the required amount of stock. Not all stock cubes are the same, and using the wrong amount can result in either a bland and watery broth or an overly salty stock.
- Cornstarch/Cornflour: this helps thicken the sauce, arrowroot or tapioca flour are fine to use also.
- Dijon Mustard: has a tangy, slightly sweet flavor that adds depth to the sauce, do not substitute with hot English mustard as it will over power the sauce.
- Fresh Parsley: Fresh parsley provides the best flavour to the sauce. However, if only dried parsley is available, it can be used as a substitute, but it's recommended to reduce the quantity due to the concentrated nature of dried herbs.
- Salt and Pepper - These basic yet essential flavour enhancers are key for elevating the taste of your dishes. No food will ever be bland when these are used to season to taste.

Pork Schnitzel with Creamy Parsley Sauce
Indulge in a family-favourite pork schnitzel, featuring tender cutlets coated in seasoned wholemeal breadcrumbs, pan-fried to golden perfection, and served with a delicious creamy parsley sauce.
Ingredients
For the pork schnitzel:
- 4 boneless pork loin steaks, fat trimmed (175g per chop)
- 100g of whole wheat bread
- 1 teaspoon of paprika
- 1 teaspoon of Mixed Herbs or Italian seasoning
- 1 teaspoon of salt
- ½ teaspoon of onion powder
- ½ teaspoon of black pepper
- 2 medium eggs
- olive oil spray
For the creamy parsley sauce:
- 120g of light cream cheese
- 300ml (2.25 cups) of chicken stock
- 1 teaspoon of dijon mustard
- ½ tablespoon of cornstarch
- 2 tablespoons of fresh chopped parsley
- pinch of black pepper
Instructions
- Place pork loins onto a chopping board and using a meat tenderising, bash the pork loins until you have thin pork escalopes.
- Lightly toast the bread and add to a mini food processor and blitz until breadcrumbs.
- Mix the breadcrumbs with the seasonings on a large plate
- Whisk together the eggs in a shallow dish.
- Dip the pork loins into the beaten egg and then coat with the breadcrumbs patting the breadcrumbs into the pork to ensure it coats well, repeating with other pork loins and set aside.
- Heat a frying pan over a medium heat and spray generously with olive oil spray
- Add the pork loins and cook until the underneath is golden (approx 5-6 minutes), then spray over the top of the loins generously with more olive oil spray and flip and repeat on the other side until the pork is cooked through.
- While pork is cooking you can make your sauce.
- In a jug, whisk together the chicken stock, cream cheese, mustard and parsley
- Add this to a small saucepan.
- Whisk the cornstarch with a tablespoon of cold water to make a paste and add this into the sauce, then gently bring sauce to a boil whisking as you do, until sauce thickens.
- Serve the pork schnitzels drizzled with the sauce and your choice of sides.
