Orange and Ginger Turkey Stir Fry - a simple and flavoursome dish that is perfect for the whole family and ready in minutes.
Stir fries are one of those easy kind of dishes where you can throw just a handful of ingredients in a pan and have dinner on the table in minutes and are a perfect way to use up some vegetables or leftover cooked turkey or chicken.
Every week without fail, I always grab a bag of power blend stir fry mix - which is a combination of shredded broccoli stalks, cabbage, carrots, kohlrabi, kale, Brussels sprouts and mini broccoli florets. It's perfect for a super quick stir fry and a great way to get some quick speed feeds into a dish.
Seasoning wise, I will usually just go for some soy sauce, garlic and ginger, but on this occasion, I fancied a little something different and opening the fridge for inspiration, I spotted a jar of orange marmalade.
Orange is definitely a great flavour to add to any stir fry dish and with some leftover shredded turkey to use up too, it was perfect.
I literally just mixed a little of the marmalade with some soy sauce, ginger, garlic and water for enough sauce to just coat all the meat and shredded flavour. The orange marmalade gave enough punch of that yummy orange flavour, without having to use too many points.
This Orange and Ginger Turkey Stir Fry could easily be eaten just as it is as a great diet friendly dish or just when you want to increase those vegetables. But as I was already cooking rice to use for egg fried rice the next day, I cooked a little extra to serve with this.

How can I add a ⅓vegetables to this Orange and Ginger Turkey Stir Fry?
With all those yummy shredded vegetables in this recipe, you really do not need to worry about the vegetables, but if you do want to increase them a little further, serve with this Egg Fried Cauli Rice instead of regular rice - yum!!

Orange and Ginger Turkey Stir Fry - a simple and flavoursome dish that is perfect for the whole family and ready in minutes
Ingredients
- 250g (9oz) of leftover cooked shredded turkey or chicken
- 1 bag 350g (12.5oz) of shredded veg (or use your own shredded vegetables, cabbage, carrot etc)
- 1 tbs of freshly grated ginger
- 1 tbs of orange marmalade
- 2 tbs of dark soy sauce
- ¼ cup (4 tbs) of water
- Black Pepper to season
- 2 spring onions, finely sliced
- cooking oil spray
Instructions
- Mix the ginger, soy sauce, water and marmalade together in a bowl.
- Spray a wok or frying pan over a medium high heat with cooking oil spray
- Add the shredded veg and fry for 3 minutes.
- Add in the cooked turkey or chicken) and stir fry for a couple of mins
- Pour in the sauce and toss to combine. Heating until the sauce has reduced down and just coats the turkey and shredded veg.
- Season as need with black pepper
- Garnish with finely sliced spring onion.
- Serve with your choice of sides.
- Enjoy!!
