Honey Lime and Chilli Salmon - delicious salmon fillet baked with a sweet and spicy glaze all finished off with a simple vegetable dish or corn, edamame, peppers, courgette and onion.
Oven Baked Salmon
I can't get enough of fish right now, especially salmon which is so easy and quick to bake in the oven with a few simple ingredients for flavour.
You can either bake as individual fillets, but occasionally like in this recipe, I will just keep the large fillet in one piece. It looks so pretty too served in the middle of the table with a few different sides.
Honey Lime and Chilli Glaze
Honey is a great ingredient to add to salmon with your seasoning, as it creates a gorgeous colour and glaze to the salmon. Plus you get the delicious sweet and spicy flavours too when combined with the rest of the ingredients in this glaze. .
This simple glaze is a combination of honey, lime juice, fresh garlic, paprika chilli flakes with cilantro (fresh coriander) and some simple sea salt and black pepper.
Don't use this glaze for just salmon though, its is perfect on white fish or even some chicken thighs too.
Cooking Salmon Fillets
When pan cooking salmon I will typically cook skin side down first to crisp up that beautiful skin, but when I bake I typically don't tend to eat the skin, it's just a personal choice for me.
However I do leave the skin on to cook it still especially if keeping in one large fillet like in this recipe. It helps stop the salmon from falling apart and keeps it much more tender, soft and juicy.
How long to cook will typically depend on the size and thickness of the fillet as well as your oven and what else you are cooking it with. 8 minutes with a couple of minutes under the grill just to ensure the glaze was lovely and golden was perfect for this piece. Tender, moist and juicy.
Some prefer their salmon more cooked some prefer less, so go for whats best for you. Salmon is cook when it goes from completely translucent to slightly pink and translucent in the centre and has a minimum internal temperature of 145˚F
Can you use frozen salmon fillets?
If you want to use frozen salmon, I recommend choosing good quality fillets that are wild caught, some frozen salmon can be really poor quality and doesn't taste very nice at all.
I like to completely thaw the salmon in the fridge overnight, so that it's completely defrosted when cooking. This ensures it cooks evenly and is not overcooked.
Sautéed Vegetables with Corn and Edamame.
This simple side dish is a perfect accompaniment to this Honey Chilli Lime Salmon and is super quick to make.
Sautéed onions, red pepper, courgette with some simple seasoning a little stock and some corn, edamame and cilantro (coriander).

Honey Lime and Chilli Salmon - delicious salmon fillet baked with a sweet and spice glaze all finished off with a simple vegetable dish or corn, edamame, peppers, courgette and onion.
Ingredients
- 650g (23oz) fresh salmon fillet
- 4 tablespoons honey
- 1 tablespoon of fresh lime juice
- 1 teaspoon of red chili flakes (add more or less depending on your spice level)
- 1 teaspoon of paprika
- 1 tablespoon of fresh chopped cilantro
- 1 spring onion (green part only), finely chopped
- 1 clove garlic, crushed
- olive oil spray oil
- salt and black pepper
- fresh lime slices to garnish
Sautéed vegetables with corn and edamame
- 1 onion, diced
- 1 red bell pepper, diced
- 1 courgette (zucchini), diced
- 80g (½ cup) of frozen corn,
- 80g (½ cup) of frozen shelled edamame beans
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon of onion powder
- 120ml (½ cup) chicken stock
- small handful of fresh coriander (cilantro), chopped
- Salt and black pepper pepper
- olive oil spray
Instructions
- Preheat oven to 200c/180c/400f or gas mark 6
- Place the salmon on a baking tray lined with foil.
- In a bowl combine the honey, red chilli flakes, lime juice, paprika, coriander, garlic and spring onion.
- Spoon the marinade all over the top of the salmon fillet. Then season with salt and black pepper and spray over the top with olive oil spray
- Bake in the oven for approx 8 minutes (time may vary by thickness of the Salmon fillet) and then place under the grill just for a couple minutes to brown the top so it's lovely a golden.
- Garnish with lime slices.
For the Sautéed Vegetables with Corn and Edamame:
- Spray a frying pan over a medium high heat with olive oil spray, add the onion and fry until lightly golden and softened.
- Add in the peppers, zucchini, paprika, garlic powder, onion powder and a pinch of salt and black pepper and fry for a further couple of minutes minute.
- Add in the corn and edamame beans along with the stock and continue to fry until the stock reduces down around all the vegetables.
- Taste and add more salt and pepper if needed. Stir in some chopped coriander (cilantro).
- Serve with the salmon and enjoy!!

OK so this is seriously delicious... This is a great recipe. Yummy! Slight variation to the recipe - lemon as no lime at my greengrocers, I cushed a dried chilli rather than use powder (just what was in my cupboard) and I can't get hold of onion powder so omitted.
This is a very easy and delicious recipe. Great for family/friends too. Also fab cold for next day lunch.

Another fan of this recipe! Absolutely delicious! I made double the amount to cook for my family aswell. I mixed all the ingredients in the same bowl, had no onion powder, but put some grated fresh ginger and chopped flat leaf parsley in. I am currently on the "original" eating plan, so had mashed swede and carrots and some fresh green beans.
