- Cajun Seasoning: I use my own blend of spices for this to ensure the best taste (see below)
- Chicken Breast: These are flattened with a meat tenderizer to ensure even cooking, you can either use 2 large chicken breast, butterflied in half to make 4 chicken breasts, or use 4 small chicken breast - total weight you want is around 700g
- Low Calorie Spray - Use your preferred choice of low calorie spray, I prefer olive oil or avocado sprays without any added emulsifiers.
- Garlic: fresh garlic minced, but lazy or jarred mince garlic is fine also
- Stock: For the stock, chicken or vegetable varieties complement the other ingredients best.
- Milk Choice: I prefer semi-skimmed milk, though whole milk works well too. Avoid skimmed milk, as it tends to be too watery and won't result in the desired creamy sauce.
- Fettucine Pasta - I typically go for fettucine or tagliatelle in this recipe, but feel free to use any pasta shape you prefer.
- Parmesan - use freshly grated parmesan to ensure it melts properly into the sauce.
- Low Calorie Spray - Use your preferred choice of low calorie spray, I prefer olive oil or avocado sprays without any added emulsifiers.
- Fresh parsley - it's the perfect finishing touch for the dish. You can skip it if you'd like, but it adds a delightful and healthy touch of green to the overall presentation
- Salt and Pepper - These basic yet essential flavour enhancers are key for elevating the taste of your dishes. No food will ever be bland when these are used to season to taste.

I always prepare my own Cajun seasoning, as we've come to appreciate the precise measurements and spice blend for that perfect flavour.
Cajun Seasoning Mix - enough for a meal for 4
- 1 tablespoons of paprika
- 1 teaspoon of onion powder
- 1 teaspoon of garlic powder
- ½ teaspoon of oregano
- ½ teaspoon of dried thyme leaves
- ¼-½ teaspoon of cayenne (depending on your spice level)
In this recipe, I make just enough for the dish, but if you're looking to create a larger batch, feel free to multiply everything by 8 or 10 for a greater quantity.
When seasoning a dish with this homemade mix, I suggest using about 1-2 tablespoons for a serving size of 4. You'll discover the ideal taste for you within that range.
It's worth noting that I don't include salt in the seasoning mix. I prefer to season with salt and pepper separately, so keep that in mind.

One Pot Cajun Chicken Alfredo with Fettuccine - This mouthwatering dish features tender chicken breast seasoned to perfection with a homemade blend of bold Cajun spices, nestled into a lighter creamy Alfredo-coated fettuccine.
Ingredients
Cajun Seasoning
- 1 tablespoons of paprika
- 1 teaspoon of onion powder
- 1 teaspoon of garlic powder
- ½ teaspoon of oregano
- ½ teaspoon of dried thyme leaves
- ¼-½ teaspoon of cayenne (depending on your spice level)
For the Cajun Chicken Alfredo
- Olive oil spray
- 4 small boneless skinless chicken breasts (approx 650g/22.9oz total weight)
- salt and black pepper
- 1 tablespoon of minced garlic (lazy garlic)
- 2 cups (480ml) of chicken stock
- 1 cup (240ml) of semi skimmed milk
- 250g (8.8oz) of dried fettuccine or tagliatelle pasta
- 100g (3.5oz) of light cream cheese
- 50g (1.7oz) of parmesan, freshly grated
- handful of fresh parsley, finely chopped
Instructions
- Place the chicken breasts on a board, cover with cling film or parchment paper and use a rolling pin to bash the chicken breasts thin
- Arrange the chicken breasts on a plate (not overlapping), ensuring an even distribution of half of the Cajun seasoning. Season with salt and black pepper. Turn the chicken over and apply the remaining Cajun seasoning and again season with salt and pepper. As a guideline, I typically use approximately 1 teaspoon of sea salt and ½ teaspoon of black pepper altogether, but feel free to modify based on your personal taste.
- Heat a large deep frying pan over a medium high heat, spray generously with olive oil spray. Add the chicken breast to the pan and cook on one side for 5-6 minutes until it achieves a golden colour. Give the top of the chicken in the pan a spray with more olive oil, then flip it over and cook on the other side for an additional 5-6 minutes until golden. Once done, remove the chicken from the pan and set it aside.
- Spray the pan again with olive oil spray and add the minced garlic and cook for about 30 seconds just to infuse the flavour. Pour a small amount of chicken stock into the pan, ensuring to deglaze it by scraping off any remnants of Cajun seasoning stuck to the surface.
- Pour in the remaining stock and milk, then add the dried fettuccine pasta. Bring the mixture to a boil, then slightly reduce the heat while maintaining a bubble. Allow the pasta to simmer until it's nearly cooked, just loosely covered in the liquid, which should take about 15 minutes. You must ensure that a small amount of liquid remains for the next step otherwise you will need to add in a little bit more stock or milk.
- Add the cream cheese and sprinkle in the Parmesan into the pan, stirring continuously until fully melted. Slice the Cajun-seasoned chicken breasts that have been cooked, and arrange them on top of the pasta in the pan. Cover with a lid and continue to gently heat on low just until the sauce achieves a creamy consistency around the pasta, and the chicken is warmed through.
- Sprinkle with the fresh chopped parsley and salt and black pepper to taste.

This was lovely def will cook again. I used chopped chicken and spaghetti. Was dubious about cooking the pasta in milk but oh my it was lush and would be great with gammon/bacon maybe some mushrooms too

This looks amazing. I could only find fresh tagliatelle though… would it work with this and if so, how would I adapt? We we’re planning to have it tonight but I got sidetracked with a kids bake off competition at my daughters primary school and ended up making Mississippi mud cake instead… 🙈 Hoping to try it tomorrow night!
