- Garlic: fresh garlic minced, but lazy or jarred mince garlic is fine also.
- Ginger: fresh finely grated ginger, but ginger paste can be used also.
- Soy Sauce: This recipe calls for a blend of both light and dark soy sauce. Opt for high-quality Chinese brands to achieve the best flavour and colour; personally, I recommend Lee Kum Kee and Pearl River Bridge

- Tomato Paste (Puree): a concentrated paste that comes in a tube or small can

- Low Calorie Spray Oil: Use your preferred choice of low calorie spray, I prefer olive oil or avocado sprays without any added emulsifiers.
- Spring Onions (Scallions) - green part of the onion only, used for a garnish

Chilli Beef Noodles
Enjoy this Savoury Fusion of Flavours with our Chilli Beef Noodles recipe - featuring lean beef mince, noodles, vibrant veggies, and a delicious stir fry sauce with a kick of chilli heat from Sambal Oelek.
Ingredients
- 240g (8.4oz) of uncooked spaghettini (or thin rice noodles)
- 400g (14oz) of extra lean ground beef (mince)
- 1 onion, finely diced
- 1 red pepper, finely diced
- 1 green pepper, finely diced
- 2 teaspoons of minced garlic (or garlic cloves)
- 2 teaspoons of grated fresh ginger
- 4 tablespoons (¼ cup) of light soy sauce
- 1 tablespoon of dark soy sauce
- 3 tablespoons of maple syrup
- 4 tablespoons of sambal oelek
- 1 tablespoon of tomato paste
- 3 spring onions (green part), finely sliced
- low calorie spray oil
Instructions
- Cook spaghettini according to package directions. Drain, spray with low calorie spray and toss to. coat and set aside.
- Spray a large frying pan or wok with some low calorie spray. Add the mince, onion, peppers, ginger and garlic and cooked until the mince is brown and the peppers and onion and softened.
- Add the soy sauce, maple syrup, sambal oelek and tomato paste to a bowl and mix to combine.
- Add into the mince and mix to coat.
- Add in the noodles and toss until all the noodles are coated in the sauce and everything is warmed through.
- Season with some black pepper and Sprinkle with the chopped spring onion.
- Serve and Enjoy!!!

I'm not really a stir fry fan, but thought its nice to finally see one that you can do with mince rather than prawns or steak.
As I didnt have the two different Soy sauces, I just used one (Ketjap Manis) and instead of Chilli paste and Chilies I used Sambal (crushed chillie paste).
This was as always, truly delicious! My 3 year old loved it too!

Cooked this for dinner tonight and it was scrumptious like all your recipes, didn't know what Pak Choi was so used shredded cabbage instead and it worked really well. I have used the China Dragon stir fry sauces in the past but will never use them again this was lovely and so easy to prepare. Thank you Britmum.

This was delicious, however far too hot for us and we like heat. Have doubled checked the recipe and its a tablespoon of sambal olek and a chilli is this right as it is really mouth burning , in fact we couldnt finish it as we were in pain!! Will definitely make again but will reduce the quantity of the sambal olek to a teaspoon or two.
